Tunisia: Kairouan Hosts Maghreb Couscous Festival for the First Time, Celebrating Women, Heritage, and Culinary Unity

The 8th Maghreb Couscous Festival launched in Kairouan on Wednesday, marking the first time the historic city has hosted the event. Held from August 11 to 17, 2025, the festival also spans Tunis and Zarzis and is organized by Nakhet Bladi in collaboration with the Couscous Academy.

Festival founder Latifa Khiri highlighted the significance of holding part of the “El Bouzidiyya” performance on August 13, aligning with Tunisia’s National Women’s Day. The performance honors Aroua El Kairouaneya and celebrates women’s contributions to preserving couscous heritage, which has been listed by UNESCO as an Intangible Cultural Heritage since 2020.

Khiri emphasized the festival’s role in promoting Maghreb couscous culture, reinforcing cultural identity, and boosting tourism. Director Souad Chehibi noted that the “Graines Féminines” (Seeds of Women) contest showcases four women from across Tunisia preparing couscous using regional traditions. A preview of “El Bouzidiyya” was also presented, capturing the community spirit and craftsmanship behind traditional couscous-making.

Chehibi added that couscous, rooted in ancient Amazigh culture, unites Maghreb countries and embodies regional diversity. Tunisia alone boasts nearly 220 distinct varieties, including el ftayel from the south and barzguen from Kef. The festival continues on August 16 with cooking demonstrations and tastings at the Sidi Dhrif institute and concludes on August 17 with a “Couscous Gathering,” featuring 12 regional dishes that reflect Tunisia’s rich culinary tapestry.
